Vegetable Salad Recipe



Here's a colorful vegetable salad recipe for you:


Ingredients:


1/2 cup cherry tomatoes (halved)

1/2 cup cucumber (diced)

1/2 cup bell peppers (mixed colors, diced)

1/2 cup carrots (shredded)

1/2 red onion (thinly sliced)

1/2 cup broccoli florets

1/4 cup cheese (crumbled)

1/4 cup mixed nuts ( almonds, walnuts)

Fresh parsley or basil leaves (chopped, for garnish)

For the dressing:


3 tablespoons olive oil

3 tablespoons balsamic vinegar

2 tablespoon honey

Salt and pepper to taste

Instructions:


In a large bowl, combine the cherry tomatoes, cucumber, bell peppers, carrots, red onion, broccoli.

In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.

Drizzle the dressing over the vegetables and toss everything gently to coat.

Sprinkle the crumbled  cheese and mixed nuts over the salad.

Garnish with chopped parsley or basil leaves.

Serve immediately or refrigerate for up to a few hours before serving to allow the flavors to meld.
