Vegetable Rice Recipe
Here's a recipe mix vegetable rice:
Ingredients:
2 cups basmati rice
1 cup mixed vegetables (carrots, peas, beans, potatoes, etc.)
1 onion, finely chopped
2-3 cloves of garlic, minced
1-inch piece of ginger, grated
2-3 green chilies, chopped (adjust to your spice preference)
2 tablespoons vegetable oil or ghee
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to your spice preference)
Salt to taste
Instructions:
Rinse the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
In a large pot or pan, heat the oil or ghee over medium heat. Add cumin seeds and let them splutter.
Add chopped onions, minced garlic, grated ginger, and chopped green chilies. Sauté until the onions turn golden brown.
Stir in the mixed vegetables and cook for a few minutes until they start to soften.
Add coriander powder, turmeric powder, red chili powder, and salt. Mix well to coat the vegetables with the spices.
Now, add the soaked and drained basmati rice to the pot. Gently mix everything together.
Pour 4 cups of water into the pot, bring it to a boil, then reduce the heat to low. Cover the pot with a tight-fitting lid and let the rice cook for about 15-20 minutes until the rice is tender and fully cooked.
Once the rice is done, fluff it with a fork.
Serve the delicious mix vegetable rice with raita (yogurt dip) or your favorite side
