Sooji Ka Halwa Recipe
Here's a simple recipe for Sooji ka Halwa with nuts:
Ingredients:
1 cup semolina (sooji)
1/2 cup ghee (clarified butter)
1 cup sugar
2 cups water
A pinch of saffron strands (optional)
A handful of chopped nuts (almonds, cashews, and pistachios)
1 teaspoon cardamom powder
Instructions:
Heat the ghee in a pan over medium heat. Add the semolina and roast it until it turns light golden and releases a nutty aroma. Stir constantly to avoid burning.
In a separate pot, bring the water to a boil. If using saffron, soak it in a tablespoon of warm water and add it to the boiling water.
Slowly pour the boiling water into the roasted semolina, stirring continuously to prevent lumps from forming.
Add the sugar to the mixture and keep stirring until the sugar dissolves completely.
Lower the heat and let the halwa simmer until it thickens and the semolina cooks completely. It should reach a smooth and pudding-like consistency.
Stir in the chopped nuts and cardamom powder. Mix well.
Turn off the heat and let the halwa rest for a few minutes before serving.
Garnish with additional nuts if desired, and enjoy your delicious Sooji ka Halwa!
You can adjust the sweetness according to your preference by adding more or less sugar. Also, feel free to add other dry fruits of your choice for additional flavors.
