Gajrela Kheer Recipe



Here's a Delicious Gajrela (Carrot) Kheer recipe:


Ingredients:


1 cup grated carrots

4 cups milk

1/2 cup sugar (adjust to taste)

1/4 cup rice (washed and drained)

1/4 teaspoon cardamom powder

Chopped nuts (almonds, pistachios) for garnishing

Saffron strands (optional)

Instructions:


In a heavy-bottomed pan, heat milk and bring it to a boil. Reduce the heat to low and let it simmer, stirring occasionally.

In another pan, add the grated carrots and cook them for about 10 minutes until they soften.

Add the cooked carrots to the simmering milk and continue to cook on low heat, stirring occasionally.

Add washed rice to the mixture and let it cook until the rice is soft and the mixture thickens, about 40-50 minutes.

Stir in sugar and cardamom powder, and let it simmer for another 10-15 minutes.

If using saffron, soak a few strands in a tablespoon of warm milk and add it to the kheer.

Once the kheer reaches the desired consistency, turn off the heat and let it cool.

Garnish with chopped nuts before serving.
