Chicken With Pineapple Recipe



Here's a delicious recipe for Chicken with Pineapple:


Ingredients:


2 boneless chicken breasts, cut into bite-sized pieces

1 cup pineapple chunks (canned or fresh)

1/4 cup cornflour

1/4 cup soy sauce

2 tablespoons vegetable oil

1 tablespoon minced garlic

1 tablespoon minced ginger

1/2 cup chicken broth

2 tablespoons brown sugar

Salt and pepper to taste

Optional: sliced bell peppers, onions, or other vegetables

Instructions:


In a bowl, coat the chicken pieces with cornflour, salt, and pepper.

Heat the vegetable oil in a pan over medium-high heat. Add the chicken pieces and cook until they're golden brown and cooked through. Remove them from the pan and set aside.

In the same pan, add a bit more oil if needed and sauté the minced garlic and ginger until fragrant.

Add the pineapple chunks and cook for a couple of minutes until slightly caramelized.

In a separate bowl, whisk together soy sauce, chicken broth, and brown sugar until the sugar is dissolved. Pour this mixture into the pan.

If using vegetables, add them to the pan now.

Return the cooked chicken pieces to the pan and stir everything together.

In a small bowl, mix a tablespoon of cornflour with a couple of tablespoons of cold water to make a slurry. This will help thicken the sauce.

Add the cornflour slurry to the pan and stir until the sauce thickens and coats the chicken and vegetables evenly.

Taste and adjust the seasoning with salt and pepper if needed.

Serve the chicken with pineapple over steamed rice or noodles.
