Chicken Korma Recipe



Chicken Korma is a rich and flavorful Indian and Pakistani dish that is loved by many. Here's a delicious and easy-to-follow Chicken Korma recipe:


Ingredients:


500g boneless chicken, cut into bite-sized pieces

1 large onion, finely chopped

2-3 cloves of garlic, minced

1-inch piece of ginger, grated

1/2 cup plain yogurt (preferably full-fat)

1/2 cup  cream 

1/4 cup ground almonds or cashew nuts

2 tablespoons vegetable oil or ghee

2 tablespoons tomato paste

1/2 cup water

1 teaspoon garam masala

1/2 teaspoon turmeric powder

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

1/4 teaspoon ground cinnamon

1/4 teaspoon ground cardamom

1/4 teaspoon cayenne pepper (adjust to your spice preference)

Salt, to taste


Instructions:


In a large bowl, mix the yogurt, ground almonds or cashew nuts, tomato paste, and all the spices (garam masala, turmeric, cumin, coriander, cinnamon, cardamom, cayenne pepper, and salt). Stir well to combine.


Add the chicken pieces to the bowl and coat them thoroughly with the spice mixture. Allow the chicken to marinate for at least 30 minutes, or ideally, refrigerate it for a few hours (overnight is best) to let the flavors meld.


In a large, deep skillet or pan, heat the vegetable oil or ghee over medium heat. Add the chopped onions and sauté until they turn golden brown and caramelized.


Add the minced garlic and grated ginger to the pan. Cook for a minute or two until the raw smell disappears.


Now, add the marinated chicken along with the spice mixture to the pan. Cook the chicken until it turns opaque and is mostly cooked through.


Pour in the chicken  water and bring the mixture to a gentle simmer. Cover the pan and let the chicken cook fully until it becomes tender and succulent. This should take about 15-20 minutes.


Once the chicken is cooked, stir in the  cream. Simmer the curry for another 5 minutes, allowing the flavors to blend together beautifully.


Taste the curry and adjust the seasoning as per your preference. If you want it spicier, add a bit more cayenne pepper


Serve the delicious Chicken Korma with roti, naan.Enjoy your meal!
