Chicken Karahi Recipe
Chicken Karahi is a popular and delicious Pakistani and North Indian dish, known for its rich and flavorful gravy. Here's a classic Chicken Karahi recipe for you.
Ingredients:
1 kg chicken, cut into pieces
4 medium-sized tomatoes, finely chopped
2 large onions, finely sliced
2-3 green chilies, thinly sliced (adjust to your spice preference)
1/4 cup vegetable oil or ghee
1 tablespoon ginger paste
1 tablespoon garlic paste
1/2 cup plain yogurt (beaten)
1 teaspoon cumin seeds
1 teaspoon red chili powder (adjust to your spice preference)
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala
1/2 teaspoon dried fenugreek leaves (kasuri methi), crushed (optional)
Fresh coriander leaves, chopped, for garnish
Salt to taste
Instructions:
Heat oil or ghee in a large karahi (wok) or heavy-bottomed pan over medium heat. Add cumin seeds and let them sizzle for a few seconds until they release their aroma.
Add finely sliced onions and sauté until they turn golden brown.
Add ginger and garlic paste. Cook for a couple of minutes until the raw smell disappears.
Add the chicken pieces to the karahi. Increase the heat to medium-high and cook the chicken until it changes color and the edges start to brown slightly.
Stir in the chopped tomatoes and green chilies. Cook until the tomatoes become soft and oil starts to separate from the masala. This should take about 8-10 minutes.
Add red chili powder, coriander powder, turmeric powder, and salt. Mix well and continue to cook for another 5 minutes.
Reduce the heat to low and add beaten yogurt. Stir the yogurt continuously to avoid curdling and let it cook with the chicken for about 5 minutes.
At this point, check the chicken's tenderness. If it's not fully cooked, add a splash of water, cover the karahi, and let it simmer until the chicken is tender.
Once the chicken is cooked and the gravy has thickened to your desired consistency, add garam masala and crushed dried fenugreek leaves (kasuri methi). Mix well.
Turn off the heat and garnish the Chicken Karahi with freshly chopped coriander leaves.
