Bhalla Papdi Chaat


Here's a complete Bhalla Papdi Chaat recipe for you:


Ingredients:


For the Bhallas:


1 cup dal mash (split black gram)

1/2 inch ginger, finely grated

1 green chili, finely chopped

A pinch of asafoetida (hing)

Salt to taste

Oil for deep frying

For the Papdi:


1 cup all-purpose flour (maida)

1/4 teaspoon baking soda

A pinch of salt

Water to knead the dough

For the Tamarind Chutney:


1/2 cup tamarind pulp

1/2 cup jaggery (gur), grated

1 teaspoon roasted cumin powder

1/2 teaspoon red chili powder

Salt to taste

Water

For the Green Chutney:


1 cup fresh coriander leaves

1/2 cup fresh mint leaves

2 green chilies

1 tablespoon lemon juice

Salt to taste

Water

For the Yogurt Mixture:


1 cup thick yogurt (curd)

2 tablespoons powdered sugar

1/2 teaspoon roasted cumin powder

Salt to taste

Water (to adjust consistency)

For Garnish:


Finely chopped onions

Chopped coriander leaves.

Instructions:


Bhallas:

Soak the dal mash in water for 4-5 hours. Drain the water.

Grind the dal into a smooth paste, adding very little water if needed.

Add grated ginger, chopped green chili, asafoetida, and salt to the dal batter. Mix well.

Heat oil in a pan for deep frying.

Drop small portions of the batter into the hot oil and fry until golden brown and cooked through. Remove and drain excess oil on paper towels.

Papdi:

Mix all-purpose flour, baking soda, and salt in a bowl.

Knead the dough using water until it becomes stiff.

Heat oil in a pan.

Deep fry the papdis until they become crispy and golden brown. Remove and set aside.

Tamarind Chutney:

In a saucepan, combine tamarind pulp, grated jaggery, roasted cumin powder, red chili powder, salt, and water.

Cook on low heat until the chutney thickens. Adjust the sweetness and tanginess according to your taste. Set aside.

Green Chutney:

Blend coriander leaves, mint leaves, green chilies, lemon juice, salt, and water to make a smooth chutney. Set aside.

Yogurt Mixture:

Whisk the thick yogurt with powdered sugar, roasted cumin powder, and salt. Add water to adjust the consistency and make it smooth.

Assembling the Chaat:

Take a serving plate and arrange the Bhallas and Papdis.

Pour the yogurt mixture over them generously.

Add the tamarind chutney and green chutney as per your taste preference.

Garnish with chopped onions, and coriander leaves.
