Zarda Recipe With Nuts
Here's a Zarda recipe with nuts:
Ingredients:
1 cup Basmati rice
1 cup sugar
1/4 cup ghee (clarified butter)
1/4 cup mixed nuts (almonds, cashews, pistachios), chopped
1/4 teaspoon saffron strands (soaked in warm milk)
1/2 teaspoon cardamom powder
1/4 teaspoon nutmeg powder
A pinch of food color
Water for boiling rice
Instructions:
Wash the Basmati rice thoroughly and soak it in water for about 30 minutes. Drain the water after soaking.
Boil the rice in water until it's about 70-80% cooked. Drain the rice and set it aside.
In a heavy-bottomed pan, heat the ghee over medium heat.
Add the chopped nuts and sauté them until they turn golden. Remove the nuts and set them aside.
In the same pan, add the soaked saffron strands and a little milk. Allow it to infuse for a few minutes.
Add the sugar to the saffron-infused milk and cook until the sugar dissolves, creating a syrup.
Add the cardamom powder, nutmeg powder, and food color to the syrup. Mix well.
Gently fold in the partially cooked rice into the syrup. Be careful not to break the rice grains.
Cover the pan with a tight-fitting lid and cook on low heat for about 10-15 minutes, allowing the flavors to meld.
Once the rice is fully cooked and has absorbed the flavors, gently fluff it with a fork.
Sprinkle the roasted nuts over the Zarda and give it a light mix.
Cover the pan and let it sit for a few more minutes.
Serve the Zarda warm, garnished with additional nuts if desired.
