Stuffed Bitter Gourd (Bharay Huy Karely)




Here's a recipe for Stuffed Bitter Gourd

(Bharay huy karely)

 with Mutton Mince:


Ingredients:


4-6 bitter gourds (karela)

250g mutton mince

1 onion, finely chopped

2 tomatoes, chopped

2-3 green chilies, finely chopped

1 tablespoon ginger-garlic paste

1 teaspoon cumin seeds

1 teaspoon coriander powder

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder (adjust to taste)

Salt to taste

Oil for cooking

Fresh coriander leaves for garnish

Instructions:


Wash the bitter gourds and scrape the rough skin lightly. Cut each bitter gourd into halves lengthwise and remove the seeds. You can also lightly salt them and leave them aside for 15 minutes to reduce bitterness, then rinse and pat dry.

Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.

Add ginger-garlic paste and sauté for a minute until the raw smell disappears.

Add chopped tomatoes and cook until they soften and the oil starts to separate.

Add mutton mince and cook until it changes color and starts to brown.

Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes until the mince is cooked through.

Stuff the mutton mince mixture into the bitter gourds.

Heat some more oil in a pan and place the stuffed bitter gourds in it. Cover and cook on low heat for about 20-25 minutes, turning occasionally, until the bitter gourds are tender.

Garnish with chopped green chilies and fresh coriander leaves.

Serve hot with roti.
