Sooji Ki Kheer Recipe
Here's a recipe for Sooji (Semolina) ki Kheer:
Ingredients:
1/2 cup sooji (semolina)
4 cups milk
1/2 cup sugar (adjust to taste)
2-3 tablespoons ghee (clarified butter)
1/4 teaspoon cardamom powder
Chopped nuts (almonds, cashews, pistachios) for garnishing
Raisins for garnishing
Instructions:
Heat ghee in a heavy-bottomed pan over medium heat.
Add sooji and roast it until it turns golden brown and releases a nutty aroma.
In a separate pot, bring milk to a boil.
Slowly add the roasted sooji to the boiling milk while stirring continuously to avoid lumps.
Let the mixture simmer on low heat, stirring occasionally, until the sooji cooks and the kheer thickens. This might take about 15-20 minutes.
Add sugar and cardamom powder, and continue to cook for another 5-10 minutes until the sugar dissolves and the kheer reaches the desired consistency.
In a small pan, heat a little ghee and fry the chopped nuts and raisins until they turn golden. Use these as a garnish for the kheer.
Turn off the heat and let the kheer cool slightly before serving. It will thicken further as it cools.
