Sheer Khorma Recipe
Here's a delicious Sheer Khorma recipe:
Ingredients:
1 cup vermicelli (thin, roasted)
1 cup khoya
1/2 cup mixed nuts (almonds, pistachios, cashews), chopped
1/4 cup raisins
4 cups whole milk
1/2 cup sugar (adjust to taste)
1/4 teaspoon cardamom powder
A pinch of saffron strands
2 tablespoons ghee (clarified butter)
Rose water (a few drops, optional)
Instructions:
Heat the ghee in a heavy-bottomed pan over medium heat. Add the chopped nuts and raisins. Sauté until the nuts are lightly golden and the raisins plump up. Remove and set aside.
In the same pan, crumble the khoya and sauté for a couple of minutes until it turns slightly golden and releases its aroma.
Add the roasted vermicelli to the pan and sauté for another 2-3 minutes until it's also slightly golden.
Pour in the milk and let it come to a gentle boil. Reduce the heat to low and let it simmer for about 15-20 minutes, stirring occasionally to prevent sticking.
Add the sugar and cardamom powder to the milk. Stir well and continue to simmer for another 10-15 minutes until the milk thickens and reduces.
Meanwhile, soak the saffron strands in a tablespoon of warm milk. Once soaked, add the saffron milk to the sheer khorma for a lovely color and flavor.
Finally, add the nuts and raisins to the khorma. Mix well and let it simmer for a few more minutes.
If you like, you can add a few drops of rose water for a delightful fragrance.
Turn off the heat and let the sheer khorma cool slightly before serving.
Serve warm or chilled, depending on your preference.
