Jalebi Recipe


Here's a simple recipe for making Jalebi:


Ingredients:


1 cup all-purpose flour (maida)

1 tablespoon chickpea flour (besan)

1/4 teaspoon baking powder

1/4 teaspoon orange food color

1 1/2 cups sugar

1 tablespoon yogurt 

1 cup water

A pinch of saffron strands (optional)

1/2 teaspoon cardamom powder

Oil or ghee for frying

Instructions:


In a mixing bowl, combine the all-purpose flour, chickpea flour, baking powder, and orange food color.

Gradually add yogurt and water to the dry ingredients and mix to form a smooth batter. The batter should be thick yet flowing. Let it rest for about 30 minutes.

In a separate saucepan, prepare the sugar syrup by dissolving sugar in water. Add saffron strands and bring it to a boil. Let it simmer for about 5-7 minutes until it reaches a slightly sticky consistency. Add cardamom powder and turn off the heat.

Heat oil or ghee in a deep frying pan over medium heat.

Fill a squeezable plastic bottle or a piping bag with the batter.

Squeeze the batter in a circular motion into the hot oil to form spirals. Fry the jalebis until they are golden and crispy. Make sure to fry them on medium heat to ensure they cook evenly.

Once fried, remove the jalebis from the oil and directly immerse them in the warm sugar syrup. Let them soak for a minute or two, then gently take them out and place them on a plate.

Serve the jalebis warm, garnished with chopped nuts if desired.
