Green Chilli Pickle Recipe
Here's a recipe for green chili pickle:
Ingredients:
250 grams green chilies
2 tablespoons mustard seeds
1 tablespoon fenugreek seeds
1 tablespoon cumin seeds
1/2 tablespoon turmeric powder
1/2 tablespoon asafoetida (hing)
1 tablespoon salt (adjust to taste)
1/4 cup mustard oil
Instructions:
Wash the green chilies thoroughly and pat them dry. Slit each chili vertically, leaving the stems intact.
Heat a pan over low heat and dry roast mustard seeds, fenugreek seeds, and cumin seeds until fragrant. Let them cool and then grind them into a coarse powder.
Mix the powdered spices, turmeric powder, asafoetida, and salt in a bowl.
Stuff each chili with the spice mixture and place them in a sterilized glass jar.
Heat the mustard oil until it starts to smoke. Remove from heat and let it cool slightly.
Pour the slightly cooled oil over the stuffed chilies in the jar. Make sure the chilies are completely submerged in the oil.
Close the jar with a tight-fitting lid and let it sit in a cool, dry place for at least a week before using. Enjoy your homemade green chili pickle!
