Gajar Ka Halwa With Khoya Badam
Here's a simple recipe for Gajar ka Halwa with khoya Saffron and Badam (Almonds):
Ingredients:
500g carrots, peeled and grated
1/2 cup khoy (dried evaporated milk solids)
1/2 cup sugar (adjust to taste)
1/4 cup ghee (clarified butter)
1/4 cup chopped badam (almonds)
A pinch of saffron strands (soaked in 2 tbsp warm milk)
1/2 tsp cardamom powder
Chopped pistachios for garnishing
Instructions:
Heat ghee in a heavy-bottomed pan. Add grated carrots and sauté on medium heat until they are cooked and the raw smell disappears. This might take around 20-25 minutes.
Add khoya and cook for another 5-7 minutes, stirring continuously until the mixture thickens.
Add sugar and mix well. The sugar will release moisture, so continue cooking until the mixture thickens again.
Add saffron-soaked milk, cardamom powder, and chopped badam. Mix everything well and cook for another 5-7 minutes.
Keep stirring and cooking until the halwa reaches a desired consistency and the ghee starts to separate from the mixture.
Turn off the heat and garnish with chopped pistachios.
