Chicken with Almond Recipe
Here's a recipe for delicious chicken with almond:
Ingredients:
2 boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 cup sliced almonds
1/4 cup cornflour (cornstarch)
Salt and pepper to taste
2 tablespoons vegetable oil
2 cloves garlic, minced
1/4 cup chicken broth
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon vinegar
Green onions, chopped, for garnish
Instructions:
In a bowl, combine the cornflour, salt, and pepper. Dredge the chicken pieces in the cornflour mixture, shaking off any excess.
Heat the vegetable oil in a skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced almonds and toast them for a few minutes until they're lightly browned. Remove and set aside.
In the same skillet, add a bit more oil if needed and sauté the minced garlic for about 30 seconds until fragrant.
In a small bowl, whisk together the chicken broth, soy sauce, honey, and vinegar. Pour the mixture into the skillet with the garlic and bring to a simmer.
Return the cooked chicken to the skillet and toss to coat in the sauce.
Add the toasted almonds and stir to combine.
Cook for another minute or two until the sauce thickens and coats the chicken.
Serve the chicken with almond over rice or noodles, and garnish with chopped green onions.
