Tasty White Chicken Karahi



Tasty White Chicken Karahi is a popular Pakistani and North Indian dish known for its rich and creamy texture. It is typically prepared using bone-in chicken pieces cooked with a variety of spices and a creamy base. Below is a delicious recipe to make this flavorful dish at home:


Ingredients:


1 kg bone-in chicken pieces (preferably with skin)

1 cup plain yogurt (whisked until smooth)

1/2 cup vegetable oil or ghee (clarified butter)

2 large onions, finely chopped

2 tomatoes, finely chopped

1 tablespoon ginger paste

1 tablespoon garlic paste

1 teaspoon cumin seeds

1 teaspoon black pepper powder

1 teaspoon coriander powder

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder (adjust to your spice preference)

1/2 teaspoon garam masala

1/2 cup fresh coriander leaves, chopped

1-2 green chilies, sliced (for garnish)

Salt to taste

Instructions:


In a large and deep pan or karahi, heat the vegetable oil or ghee over medium heat.

Add the cumin seeds and let them splutter for a few seconds. Then, add the chopped onions and sauté until they become translucent and slightly golden brown.

Add the ginger paste and garlic paste to the onions. Sauté for a minute or two until the raw smell disappears.

Now, add the chopped tomatoes, salt, black pepper, coriander powder, turmeric powder, and red chili powder. Cook the masala until the tomatoes become soft and the oil starts to separate from the mixture.

Add the bone-in chicken pieces to the masala. Mix well, ensuring that the chicken is coated evenly with the spices. Cook for about 5-7 minutes on medium heat until the chicken starts to brown.

Reduce the heat to low, and then add the whisked yogurt to the chicken. Stir continuously to combine the yogurt with the chicken and spices. Cover the pan and let it cook on low heat for about 15-20 minutes or until the chicken is fully cooked and tender.

Once the chicken is cooked, uncover the pan and increase the heat to medium-high. Cook for a few more minutes, stirring occasionally, until the gravy thickens and the oil starts to separate again.

Sprinkle garam masala and chopped coriander leaves over the chicken karahi. Mix well to incorporate the flavors.

Garnish with sliced green chilies for an extra kick of spiciness and color.
