Ingredients:
500g boneless chicken, cut into bite-sized pieces
1 large onion, thinly sliced
1 large bell pepper (capsicum), thinly sliced
1 medium carrot, thinly sliced
1 cup sliced mushrooms (optional)
2-3 green chilies, finely chopped (adjust to your spice preference)
3-4 cloves of garlic, minced
1-inch piece of ginger, grated
2 large tomatoes, chopped
2 tablespoons tomato paste
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 tablespoon coriander powder
1 tablespoon cumin powder
1 tablespoon garam masala
1/2 teaspoon red chili powder (adjust to your spice preference)
1/4 cup plain yogurt
3-4 tablespoons vegetable oil
Salt to taste
Fresh cilantro (coriander leaves), chopped for garnish
Marinade:
2 tablespoons plain yogurt
1 teaspoon garam masala
1 teaspoon paprika or red chili powder
1/2 teaspoon turmeric powder
1 tablespoon lemon juice
Salt to taste
Instructions:
In a bowl, combine all the marinade ingredients and add the chicken pieces. Mix well to coat the chicken with the marinade. Cover the bowl and let it marinate for at least 30 minutes in the refrigerator.
Heat 2-3 tablespoons of vegetable oil in a large pan or wok over medium-high heat. Once the oil is hot, add the marinated chicken pieces and cook until they are browned and cooked through. Remove the chicken from the pan and set it aside.
In the same pan, add a little more oil if needed. Add the cumin seeds and let them splutter.
Add the sliced onions, minced garlic, and grated ginger. Sauté until the onions turn translucent and the raw smell of garlic disappears.
Now, add the chopped tomatoes and tomato paste to the pan. Cook until the tomatoes soften and the oil begins to separate from the mixture.
Add the turmeric powder, coriander powder, cumin powder, garam masala, and red chili powder. Stir well and cook the spices for a minute or two to release their flavors.
Stir in the sliced bell peppers, carrots, and chopped green chilies. Cook for a few minutes until the vegetables are slightly tender but still have a crunch.
Lower the heat and add the cooked chicken back to the pan. Mix everything together until the chicken and vegetables are evenly coated with the spicy tomato sauce.
Pour in the plain yogurt and mix well. Adjust the salt according to your taste.
Cover the pan and let the Chicken Jalfrezi simmer for a few more minutes on low heat to allow the flavors to meld together.
Once the dish is ready, garnish with chopped cilantro (coriander leaves).
Your tasty Chicken Jalfrezi is now ready to be served! Enjoy it with steamed rice or naan for a complete and satisfying meal.
