Mango Chutney Recipe
Here's a simple mango chutney recipe:
Ingredients:
2 ripe mangoes, peeled and diced
1/2 cup sugar
1/4 cup white vinegar
1/4 cup water
1 teaspoon grated ginger
1 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1/4 teaspoon turmeric powder
1/4 teaspoon red chili flakes (adjust to your taste)
Pinch of salt
Instructions:
In a saucepan, combine diced mangoes, sugar, water, and vinegar. Cook over medium heat until the mangoes soften and the mixture thickens slightly.
In a separate small pan, heat some oil and add mustard seeds and cumin seeds. Once they start to splutter, add grated ginger, turmeric powder, and red chili flakes. Stir for a minute until the spices release their aroma.
Add the spice mixture to the mango mixture and stir well. Simmer for a few more minutes until the chutney reaches your desired consistency.
Taste the chutney and add a pinch of salt or more sugar if needed, depending on your preference.
Remove from heat and let the chutney cool down before transferring it to a clean, airtight container.
