Delicious Chicken Rice Polao
Chicken Rice Polao is a delicious and flavorful dish that combines tender chicken and fragrant rice with various aromatic spices. Here's a recipe:
Ingredients:
2 cups basmati rice (soaked in water for 30 minutes)
500g bone-in chicken pieces (cut into desired size)
1 large onion, thinly sliced
3-4 garlic cloves, minced
1-inch piece of ginger, grated
2-3 green chilies, sliced (adjust to your spice preference)
1/2 cup plain yogurt
1/2 cup fried onions (optional, for added flavor and garnish)
1/4 cup vegetable oil or ghee
1/4 cup warm water
Whole garam masala (2-3 cloves, 2-3 green cardamoms, 1 cinnamon stick)
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to your spice preference)
Salt to taste
Instructions:
In a large pot, heat the oil or ghee over medium heat. Add the whole garam masala (cloves, cardamoms, and cinnamon stick) and cumin seeds. Let them sizzle for a few seconds until they release their aroma.
Add the thinly sliced onions and sauté until they become golden brown.
Add the minced garlic, grated ginger, and sliced green chilies. Cook for a couple of minutes until the raw smell of garlic disappears.
Now, add the chicken pieces to the pot. Stir and cook until the chicken changes color and gets sealed.
Add the coriander powder, turmeric powder, red chili powder, and salt. Mix well to coat the chicken with the spices. Cook for a few minutes until the chicken is partially cooked.
Stir in the plain yogurt and cook for another 5 minutes until the chicken is tender and the masala is well blended.
Drain the soaked rice and add it to the pot with the chicken. Gently mix the rice with the chicken and spices, being careful not to break the rice grains.
Pour the warm water into the pot and let the rice and chicken cook together. Cover the pot with a tight-fitting lid and reduce the heat to low. Allow it to cook for about 15-20 minutes or until the rice is fully cooked and fluffy.
Once the rice is cooked, garnish fried onions on the top of rice.
Serve hot with raita, salad.
