Ingredients:
For the Malai Boti:
500g boneless chicken, cut into bite-sized pieces
1 cup yogurt
1 tablespoon ginger-garlic paste
1 tablespoon lemon juice
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to your spice preference)
1/2 cup cream
2 tablespoons oil
Salt to taste
For the Handi:
2 tablespoons ghee or butter
1 large onion, finely chopped
2-3 green chilies, sliced (adjust to your spice preference)
1 teaspoon ginger-garlic paste
1/2 cup tomato puree
1/2 cup milk
1/4 cup cashew nut paste (soaked cashews blended with water)
1/4 cup fresh cream
1/2 teaspoon garam masala
Fresh coriander leaves for garnish
Instructions:
Marinate the boneless chicken pieces in yogurt, ginger-garlic paste, lemon juice, ground cumin, ground coriander, garam masala, turmeric powder, red chili powder, cream, oil, and salt. Mix well and let it marinate for at least 2 hours (overnight marination is even better).
Heat ghee or butter in a large handi or deep skillet over medium heat. Add chopped onions and sauté until they become translucent and golden brown
Add sliced green chilies and ginger-garlic paste to the onions. Cook for another minute, stirring continuously.
Add the marinated chicken to the handi and cook until the chicken is tender and fully cooked. Stir occasionally to avoid sticking to the bottom.
Once the chicken is cooked, add the tomato puree and cook for a few more minutes until the oil starts to separate.
Stir in milk and cashew nut paste, allowing the mixture to simmer for 2-3 minutes.
Add fresh cream and garam masala, mix well, and let it cook for another 2 minutes.
Adjust salt and spices according to taste.
Garnish with fresh coriander leaves.
