Chicken Corn Soup recipe



Here's a delicious recipe for chicken corn soup:


Ingredients:


2 boneless chicken breasts, cooked and shredded

1 cup corn 

4 cups chicken broth

1 cup water

1/2 cup finely chopped carrots 

2 cloves garlic minced

1/2 cup finely chopped onions

2 tablespoons soy sauce

1 tablespoon cornstarch, dissolved in 2 tablespoons of water

2 eggs, beaten

2 tablespoons chopped green onions for garnish

Salt and pepper to taste

Instructions:


In a large pot, heat some oil over medium heat. Add minced garlic and sauté for a minute until fragrant.

Add chopped onions and carrots, and cook until they are softened.

Pour in the chicken broth and water, then bring it to a boil.

Add the shredded chicken and corn to the pot. Season with soy sauce, salt, and pepper. Let it simmer for about 10-15 minutes on low heat.

Stir in the cornstarch mixture to thicken the soup slightly.

Slowly pour  beaten eggs while gently stirring the soup. The eggs will create beautiful ribbons.

Adjust the seasoning according to your taste preference.

Serve the chicken corn soup hot, garnished with chopped green onions.
